These vegan strawberry pancakes are so delicious I could eat them every day!
Quick and easy to make – just blend everything together, fry and enjoy.
You can use whatever fruit you like in this recipe – blueberries and also banana would work well. I have used the last of the in season berries – my favourite is the raspberry! So good.

Makes 6 pancakes
1 cup oats
1/2 cup rice milk
handful of fresh strawberries
1 teaspoon vanilla essence
A little olive oil for frying
What do I do now?
Blend everything together until smooth (use blender, food processor or nutri ninja)
Add a little extra flour if the batter is too thin – it should be like cake batter
Fry on each side for about 2 minutes in a little olive oil
Top with favourite toppings and enjoy!
Anything else I should know?
You can add any fruit to the batter that you like – blueberries or more banana works well.
