A Ginger Maple Cheesecake is a little slice of heaven for someone who loves cheesecake and has figured out that Tofutti does the job and is creamy and delicious and just so incredibly yum! The fact that ginger nut biscuits are also vegan is just superb!
This is a very simple dessert, you can prepare ahead of time if you need to.

Ginger Maple Cheesecake
1 packet of ginger nut biscuits
2 tablespoons vegan butter
2 x tubs of toffuti
1/4 cup maple syrup
1 cup raw cashews (soaked at least 4 hours)
What do I do now?
Blend the ginger nut biscuits and the melted vegan butter in a food processor. Press this mix into a greased cake tin and place in the fridge.
Mix the rest of the ingredients in a food processor and place on top of the base.
Place in the fridge until set – dust with cinnamon and serve.
