Gnocchi! I always thought for some reason that it was so hard and time consuming… It’s not.
I love potatoes and am always looking for ways to eat them. This version uses boiled potato instead of baked and it is creamy, fluffy and delicious. You can add whatever topping you like. The gnocchi will absorb the sauce a little and take on some of that flavour also. I have added a tomato sauce to this recipe. Enjoy!

2 large potatoes
1 cup plain flour
1 egg replacer
4 large tomatoes
1 tablespoon tomato paste
1 clove garlic
handful fresh basil
1 tablespoon olive oil
salt and pepper to taste
What do I do now?
Peel and cut your potatoes into quarters. Boil for 15 minutes until tender.
Drain, mash and then mix in the flour and egg replacer, salt and pepper.
It should resemble dough and be able to be rolled into a log / snake like shape. Add more flour if it’s too wet.
Place a little flour on your bench / board and roll out the potato, then cut into small pieces (as per the photo).
Place in boiling water for about 5 minutes (until they float to the top), drain and serve immediately with the topping of your choice.
Cut your tomatoes into small pieces, mince your garlic and add to a pan with the olive oil, tomato paste, dash of water and salt and pepper. You can add some fresh basil at this stage also if you prefer. Otherwise simmer until very tender and saucy and then add fresh basil to serve. You could add mushroom, asparagus or anything else you like to the sauce. I like to drizzle some olive oil over the top of mine before eating. I also enjoy some burnt vegan butter and sage as a sauce combo. Simple is best.
Anything else I should know?
I saved a portion of this to see if it was still good hours later (reheated) and it was still good!
This is a very simple gnocchi recipe – ready in 30 minutes and very tasty.
If you love potatoes, you will love them this way.
