Baking vegetables can be so very pretty. So easy to prepare and only limited by your imagination and vegetable arranging skills. Whenever I see this dish I always say to myself “eat the rainbow” – which I think was from a Skittles Ad? Anyway, this is a much healthier version!
I just add a dash of olive oil and some salt and pepper and bake for about 30 minutes in the oven on 180 degrees celcius.
