The French really know how to create. Whether it is fashion or food, they are simply incredible. I was lucky enough to spend time in Paris with my husband, sister and mother following the 100 year anniversary of the Tour de France. This is a little mango sorbet from those hot summer days.
I didn’t make the one in the photo but here is my recipe. I usually just put these into one of those plastic ice block makers and freeze (you can get them from any department store for a few dollars) – see picture.
Mango Ice Block
Makes about 4 large ice blocks
4 large ripe mangoes (if you can’t get mangoes you can use those frozen mango cubes from the supermarket)
2 tablespoons of coconut milk
2 tablespoons of water
What do I do now?
I just put the mango, coconut milk and water into a blender and blend until smooth. Pour into the mould and freeze. That is all.
You can use any fruit combination you like – whatever you like to eat – banana and strawberry is really good.
Anything else I should know?
I did not think my kids would eat these but they love them. It is so easy (it’s not sorbet just frozen fruit made into an ice block. Sorbet has sugar and egg white in it usually). The coconut milk makes them taste really creamy. These need to freeze for about 5 hours or so before they are ready to eat. These are vegan and so tasty.
